Chef Michael Hüsken heads up the kitchen team at Sophia’s restaurant at Rocco Forte’s “The Charles Hotel”, Munich. He was chef in some of Germany’s most well regarded restaurants, including the two one Michelin-starred restaurants Luce d’Oro, Schloss Elmau, and Reisers am Stein in Würzburg; as well he cooked for Lafer’s Stromburg, Käfer’s, Acquarello, and Geisels Werneckhof. Michael says: “I try to cook food which is spontaneous, individual and personal. I want my guests to enjoy surprising and gastronomic food, presented simply, and delivered with warm and easy hospitality. For example, we do not only serve our guests the beef fillet, found on most menus, but also other tastier cuts of meat such as the shoulder, neck or belly. And of course fresh and seasonal vegetables, herbs and spices play a significant role.”
